The wine ages for around 6 months in used Burgundy barrels

Very much the beloved and wise grandfather to his grandchildren

this wine is very dark in color and heavy in the nose

followed by spontaneous fermentation with native  yeasts in 500 L Hungarian oak barrels

but with deeper soil and milder slopes

SOILL: clay limestone VITICULTURE: Viticulture is lutte raisone (reasoned organic). Jean Philippe aims to know his vines, and to work with them to find a healthy equilibrium. Grapes are hand harvested. VINIFICATION: Fermentations take place in barrel and wine goes through malo in barrel. AGING: 12+ months in barrel (1 6 new), plus 3 6 months in tank
